Union Jack was created as a celebration of the neighborhood pub—a place where great food, well-crafted drinks, and good company come together.

Inspired by the warmth and hospitality of traditional English pubs, Union Jack offers a welcoming space to enjoy a casual pint, a handcrafted cocktail, a hearty meal, or a special occasion with friends and family.

At the helm is chef and restaurateur Maurice Dissels, whose culinary career spans decades of experience in restaurants across Chicago, Colorado, Napa Valley, and the Bay Area. Originally from British Guyana, Maurice has built a reputation for creating memorable dining experiences rooted in hospitality, quality ingredients, and a genuine love of bringing people together through food.

Together with his family, Maurice has spent years building successful hospitality concepts in the Bay Area, including Oyo in downtown Pleasanton. With Union Jack, he brings that same commitment to service and community into a fresh take on the classic English pub.
